Ingredients
12 Brookshire’s Lasagna Noodles, cooked according to package directions
1 lb ground turkey
1/2 yellow onion, small diced
3 cloves garlic, minced
3/4 tsp ground black pepper, divided
1 (28 oz) can low-sodium tomato puree
4 tsp Italian seasoning, divided
3/4 tsp salt, divided
1/2 cup water
1 1/2 cups light ricotta cheese
2 cups (8 oz) part-skim grated mozzarella, divided
1 (10 oz) pkg Brookshire’s Frozen Chopped Spinach, thawed and pressed dry
1/4 cup parmesan cheese, grated
Directions
  1. In a large skillet over medium heat, brown the ground turkey, stirring often for about 5 minutes. Add onion, garlic and 1/2 teaspoon black pepper. Cook until onions are translucent and meat begins to brown, about 5 minutes. Add tomato puree, Italian seasoning and 1/2 teaspoon salt. Stir to combine. Bring to a simmer. Add water. Cook for 10 minutes. 
  2. In a bowl, add ricotta, 1 1/2 cups mozzarella, spinach, and 1/4 teaspoon each of salt and pepper. Stir to combine.
  3. Preheat oven to 350° F. Coat a 9 x 13 baking dish with cooking spray. Spread 1 cup of sauce in bottom of dish. Top with a single layer of 3 lasagna noodles. Add 1 cup of cheese mixture and another cup of sauce. Repeat with another layer. Top with remaining lasagna noodles. Spread remaining sauce over the top. Sprinkle with remaining mozzarella. 
  4. Place in the oven. Bake for 40 minutes until heated through and bubbly. Remove from oven. Top with parmesan. Let cool for 10 minutes before serving.
